Ingredients:
1 pound Mussels
1/2 cup olive oil
2 tablespoons chopped fresh garlic
2 tablespoons tomato paste
3 fresh chopped tomatoes
1 large minced onion
3 tablespoons chopped parsley
1 cup dry white wine
Heat oil in a large kettle. Add onion and saute until golden. Add garlic and cook for 1 minute. Add the remaining ingredients, except the mussels. Bring to a simmer. Stir well and adjust seasoning if necessary. Add boiled mussels and simmer gently for 3 minutes. Transfer mussels to serving bowls and ladle the sauce over each serving. Salt and pepper to taste. I served with Jasmine rice.

I love mussels and eat them at restaurants, but have never prepared them myself. I always thought they were complicated to make- this doesn't look too hard! I may have to try these because they sound delicious. :)

I wish my husband enjoyed mussels as much as I do! This recipe sounds delicious. Maybe I'll make him a grilled cheese and make these for myself ;)
I have never made mussels before, but they are one of my 4 year old nephew's favourite foods, so perhaps I will have to give them a shot!
Yum! You can't beat a good pan of mussels! I love them with mushrooms, bacon and cream.:)
