Last week at Foodie Friday I discovered this fabulous Strawberry Pie made by Lorraine from "With a Grateful and a Thankful Heart"Strawberry Pie
3 tablespoons cornstarch
1 1/2 cups sugar
1 1/2 cups water
1 small box strawberry Jello-O (I used sugar-free)
2 cups sliced strawberries
Pre-bake a 10" pie shell
Line bottom with the sliced strawberries
Combine cornstarch, sugar, and water in a small saucepan. Bring to a boil and simmer, stirring constantly, until thickened. Add the Jello-O and stir until dissolved. Pour over the strawberries and refrigerate until set.
Serve with whipped cream.
Thanks Lorraine, this pie was great:) Guess what I am reading. Thank you Michael Lee. Your book is fabulous!

Your recipe has transported me back to high school. I went to a downtown school and there was a restaurant a few blocks away that served strawberry pie. At least once a week, a few of us would stop in and share a piece on our way home--we usually couldn't afford more than one slice. Now I can make my own!
Best,
Bonnie
I have never seen strawberry pie before now, and now that I think about it, I wonder why!!? It looks and sounds like it would be delicious!
I love strawberries and there will be fresh ones soon. I'll have to try this recipe. It looks so good.
This has me reaming of summer. Yum!
I'd like to invite you to share this recipe on my linky, Sweet Tooth Friday. I hope to see you there. http://alli-n-son.com/2011/04/14/chocolate-birds-nests/
I'm smiling!
I am craving strawberries all of a sudden. What a great looking pie.
My mouth is watering looking at this pie. It won't be too much longer before the fresh ones come in and I can't wait. I see a pie in my future.
I copy that recipe too :) It looks delicious! I've only started the book but I'm through Chapter 11 - fun read.
Finished reading GWAHM, and Teeny is a great new addition to Michael Lee's list of quirky characters. I love spending time with her in the kitchen! ;-)
The strawberry pie looks delicious. ~ Sarah
Teeny would love your strawberry pie. She'll have to make one in a future book. XX00
