Baked Oatmeal

Recipe:

3 cups rolled oats, uncooked (old fashioned oats)


1 cup brown sugar


2 teaspoons ground cinnamon


2 teaspoons baking powder


1 teaspoon salt


1 cup milk


2 eggs


1/2 cup melted butter


2 teaspoons vanilla extract


3/4 cup dried cranberries (I used 3/4 Sun-Maid Fruit Bits and 3/4 cup fresh blueberries)


Preheat oven to 350 degrees. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish. Bake in preheated oven for 40 minutes.

I've copied this recipe to try. It reminds me of a recipe I tried quite a while back called "Oatmeal Brulee". Sounds delicious!!

I don't think I have ever made baked oatmeal, but I remember having it at camp as a kid, and it was always everyone's favourite breakfast.

I've seen this recipe several times now and keep telling myself to try it! I love the addition of the blueberries. It must taste a little like blueberry pie - yummy!
