Ritz Cracker Thin Mints

I recently visited Patti at her blog "Olla-Podrida" and discovered this great recipe. She has so many wonderful things to try. I will be back to visit her site for more recipes.
Ritz Cracker Thin Mints
1 12-oz. bag chocolate chips (I used Guittard SemiSweet Chocolate Chips)
3-4 drops peppermint oil (I used peppermint extract)
1 sleeve of Ritz Crackers
Melt the chocolate over simmering water in the top of a double boiler. Add peppermint extract to taste. dip crackers, coating well with chocolate, and place onto waxed paper to set.

I am so glad that you liked these. Aren't they fun to make? I am testing three other versions this week (in addition to the Cookies & Cream and Heath Bar versions that I recently wrote about). Who knew Ritz Crackers were so versatile?

These look soo good!!! I bought Jerry for Valentine's Day an assortment of Chocolate Covered Oreo cookies (and one ritz cracker)from Kilwins they were very good too. Looked just like yours but were $1.50 each!! Think I will make my own next time :)

What a clever use of the Ritz crackers. I can imagine the buttery and salty flavor match perfectly with the mint and chocolate! Delicious.
